In my house, we love taco night. Typically our tacos consist of either beef or chicken and recently I’ve been trying to find a healthier and fresh new way to approach taco night. I’ve toyed with the idea of making fish tacos, but had concerns about how my fish has been caught and where it came from.
When I was asked to create a recipe using MSC-certified fish from Loblaws, I was excited to explore the different options I had for choosing sustainable fish at my local grocery store. I was happy to see that making an eco-friendly choice was easy, since there were many MSC-certified fish products to choose from at my local Loblaws, including both frozen and fresh choices. I opted to head to the Fresh Seafood section and chose some cod fillets to use for my recipe.
These easy fish tacos turned out amazing! The combination of the lightness of the fish, the freshness of the lime juice and slaw, and creaminess of the cilantro lime sauce make these fish tacos a hit in our household. I have to say the quality of the cod was amazing and it was just as affordable as purchasing other fish so purchasing MSC-certified fish is a no-brainer for me now! The whole recipe took only about twenty minutes to prepare and makes the perfect the lunch or dinner for the whole family.
For the fish:
1 pound of MSC-certified cod fillets
1 tbsp olive or coconut oil
1 tbsp lime juice
1 1/2 tsp chili powder
1/2 tsp paprika
Salt and pepper
6 corn tortillas
For the slaw:
1/2 small red cabbage, chopped
1/4 cup cilantro
Juice of 1 lime
Salt to taste
For the cilantro lime sauce:
½ cup sour cream
¼ cup cilantro
Juice of 1 lime
Salt, to taste
In a medium bowl, mix together chili powder, paprika and salt and pepper (to taste). Sprinkle the mixture over both sides of your cod fillets.
Combine all of the cilantro lime sauce ingredients in a food processor or blender and pulse until combined.
Combine all of the slaw ingredients in a large bowl and toss to coat.
Heat either olive or coconut oil in a large pan over medium-high heat. Place fish in pan and cook about 4-5 minutes per side, depending on thickness. After cooked, transfer the cod to a plate and flake into chunks for tacos. If desired, warm corn tortillas in the same pan for about thirty seconds. Distribute cod evenly between tortillas, add sliced avocado, slaw and top with cilantro lime sauce.
