When I think of summer I always think “busy.” Yes, we are all familiar with the phrase “lazy summer days,” but for Canadians like me we only get a short amount of time with this warm weather and we want to maximize it. This means we pack in as much summer fun as we can – road trips, beach days, sitting by the pool, finding great hiking trails and picnic spots and just enjoying the summer sun.

That is precisely why I am sharing this easy, quick and delicious Banana Chocolate Muffin recipe! These muffins are perfect to pack on the go and the added coffee gives you a little extra energy. What’s great about this recipe is that it can be easily customized. You can substitute the whole wheat flour for white flour or even a gluten free flour like almond flour. Add a few scoops of your favourite protein powder in the mix to keep you feeling fuller longer. Remove the chocolate chips and add cacao nibs or another healthier alternative. This recipe makes approximately twenty muffins.

Banana Chocolate Muffins with Single Jo Coffee Recipe

Baking Instructions:
Preheat oven to 350. Grease or line a muffin tin.
Combine flour, baking powder, baking soda, and salt in a large bowl. Whisk together. Combine the oil, milk, mashed banana, coffee, vanilla, maple syrup, sugar, and egg. Whisk the wet ingredients together and pour over the dry ingredients. Stir the ingredients together until almost mixed. Add diced banana and chocolate chips and finish mixing until just combined, being careful not to over mix.

Scoop the batter into the prepared pans, filling the muffin cup about two-thirds full. Bake until the muffin edges are golden brown, for around 16-20 minutes.
